The Search for Good Thai Food

I grew up on the West Coast, but consider the East Coast, especially New England, to be my home. Though I spent many years in the sunny climate of Southern California, I've really come to embrace life on this side of the country.

Sure, there are things I miss about California. Besides the beaches, one of the things really comes to mind is good Thai food. While there are Thai restaurants nearby, they somehow fall a little short of the wonderful dining experience that I grew up with.

That, however, does not mean that I have to go without. Though at first glance, cooking up a meal of delicious Thai food may seem intimidating, especially when you are juggling work life and family time. However, that need not be the case, especially when you've got Thai Kitchen on your side.

We did make a few modifications. We substituted chicken in the curry, and for the stir-fry we sliced the chicken and sautéed it, preferring this shredded chicken. We also added red and green peppers for taste and presentation.

Cooking with the Children

After I'd sliced up the chicken and the vegetables, the door was now open for the kids to take over. What really impressed me was the ease and simplicity. Once the chopping was done, most of the work was accomplished by the kids.

Of course, the food was a hit, and we helped ourselves to seconds and thirds. What made the experience extra-special was that the kids were thrilled to have made a tasty meal that was not only out of the ordinary, but impressed mom to no end.
