Your cupboards are bare, you family is hungry, even your dog is looking at you with that “feed me” look. It’s Monday evening, and you are already pushed to the limit. What are you going to do? Revert to your favorites. My favorites are not just my favorites because they taste good……....they go beyond that. These are meals I know I can always revert back to with 5 guaranteed results:

  1. Limited ingredients that I most likely have around the house and can throw in without measuring
  2. Relatively healthy
  3. A “can I have seconds?” reaction
  4. Inexpensive
  5. Leftover’s will (most likely) be a result

Chicken Tacos

MMM, I get hungry just thinking about these! Throw a few breasts of chicken in the crock pot (I do about .5 per person, but always double for left over’s). Cover with green enchilada sauce. Add in corn, chopped up onion, pepper, garlic, and anything your family desires to spice it up a few notches. Let it cook until the chicken breasts are done or until you get home from work. Pull out the chicken breasts, shred or chop them, and throw them back into the crock pot.

When you are ready to eat, spoon the chicken concoction into the tortilla, top with cheese, add your favorite Mexican food toppings and you have a semi-healthy, (use organic products and skip over on the sour cream) quick and very easy meal that is a guaranteed success!

BBQ Biscuits

My sister and I found this one in a magazine and tweaked it a bit.

Pre-heat oven to 350 degrees

Cook up ground beef (we use ground turkey and it tastes great and is much healthier). Mix in BBQ sauce (about ½ cup), ketchup and brown sugar to taste, as well as about ½ a cup of onions (we always put more, we love onions though). Let it sit while you put the biscuits together.

Whip out your muffin tin and your canned jumbo biscuits. Press a jumbo biscuit into each muffin holder. Fill with the meet concoction and top with shredded cheddar cheese. Cook for about 20 minutes at 350. These are so good, my husband has to have me remove them from his presence so he does not over- over- eat.

1 thing of ground meat makes about 16 biscuits.

My favorite thing about these besides the taste is that you can cook up the meet concoction the night before or that morning, and then make them super quick when you get home and still get that fresh out of the oven taste. Burrito Pie

Cook up ground beef (again, we use ground turkey and it tastes great) until cooked. Add in onion, chopped canned tomatoes, garlic, pepper, spices and/or chiles if you like it spicy, taco seasoning, and corn to taste. Once all of this has been added in, dump in 2 cans of refried beans and mix.

Preheat oven to 350

Layer a 9x 13 casserole dish with beefy bean mix, then shredded cheddar cheese, then a tortilla (I find that 2 whole tortillas torn up to fit perfectly will cover one layer), do this over again, and once more if you have enough mix left over ending with cheese on top (I usually get two layers in).

Cook for about 20 minutes, or until cheese looks done.

Top with your favorite Mexican toppings or enjoy as is.

This feeds 8, or less with lots of leftovers.

Italian Fish

We buy frozen Mahi Mahi at Costco. My husband hates fish but has been on a “healthier” kick so he decided to give fish another shot. We found that marinating it in Italian dressing all day (just pour some dressing in a little sandwich bag with the fish and stick it in the fridge), then wrapping it up in foil, and cooking it for 20 minutes at 350 degrees removes the fishy taste he cannot stand. You can also throw in some onions and garlic for extra veggies and an even better taste.

While this is cooking, throw pasta (whole grain for an even healthier meal) on the stove. Once it is done boiling, drain, and throw on Italian dressing and parmesan cheese to taste. Serve with the fish and you have a very tasty fish meal, without the fish taste!

Breakfast for Dinner

We love fried egg sandwiches, but usually start our day off with a bowl of oatmeal, so this is a welcomed treat!

Cook up eggs sunny side up, or however your family prefers. Add in pepper and garlic for extra flavor. Cook with olive oil instead of butter.

While the eggs are cooking, toast your favorite bread, we find that sourdough is the most well matched for this meal.

Heat up sliced ham on the stove for the hungry meat eaters.

Put the egg, ham and a slice of (or handful of shredded) your favorite cheese with the bread and you have a very tasty breakfast, dinner sandwich.

Slice up your favorite fruit for something on the side. Or you can slice up some red potatoes, season with olive oil, sea salt, rosemary and parmesan cheese. Throw them on a cookie sheet for 30 -40 minutes at around 425 degrees. For best results flip the potatoes over around 20 minutes so both sides get crispy. Then you have healthy little french fries with your sandwich.

Chicken Broccoli Cheddar Casserole

Cook up chicken breast seasoned in olive oil and garlic (about .5 -1 chicken breast per person, we always make extra) for 25 minutes at 350 degrees. While chicken is cooking, making brown rice on the stove (1 serving for every 1 chicken breast). Once chicken is done shred or cut up in to bite size pieces, mix in with rice, cheddar cheese to taste, cream of mushroom can (1 -2 cans) and chopped up fresh broccoli. Throw in a baking pan, top with cheddar cheese, and throw in the oven until the cheese is melted, about 5 minutes (my husband also likes this with corn).

The best thing about these recipes is that you can supplement ingredients to meet your family’s favorite tastes, or for whatever you have in the cupboards!
